This is my third recipe using the ammini kozhukattai, i have already shared sweet ammini kozhukattai and spicy ammini kozhukattai. This one is the traditional way of making that. Normally tempering with the spices and tossed in grated coconut, frankly speaking this one is my all time favourite.

About Ammini Kozhukattai Recipe

Ammini Kozhukattai, also known as Mini Kozhukattai or Mani Kozhukattai, is a light and healthy snack made from rice flour.

Kozhukkattai, also known as kozhukatta, is a popular South Indian dumpling made from rice flour and filled with grated coconut, jaggery, or chakkavaratti. Kozhukattai, while typically sweet, can occasionally be stuffed with a savoury filling. Kerala Christians prepare it on the Saturday before Palm Sunday, hence the name Kozhukatta Saturday. Modak is a similar dish that is prepared in other parts of India. This is a popular dish for the Ganesh Chaturthi festival.

Ingredients for Ammini Kozhukattai Recipe

Rice Flour / Arisi Mavu:
Rice flour is a type of flour that is made from finely ground rice. It differs from rice starch, which is typically made by steeping rice in lye. Rice flour is a popular wheat flour substitute.

Fresh Coconut :
Fresh coconut meat tastes tropical, nutty, and slightly sweet. It has a strong flavour, particularly when dried. When coconut is roasted, it takes on a woodier flavour with hints of vanilla. Fruit, water, and milk are all popular and highly valued for their fresh, sweet, and refreshing qualities.

Mustard Seeds :
They are used as a seasoning rather than a base flavour in many Indian dishes, and they really perk up a lentil or rice dish when fried in a little oil with curry leaves . As a result, mustard seeds are excellent for adding flavour without adding fat to your diet.

Ingredients

  • For Dough:
  • 1 cup Rice Flour
  • ½ cup Fresh Coconut grated
  • ½ tsp Salt
  • 1¾ cup Water
  • 1 tbsp Oil
  • For Tempering:
  • 1 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tbsp Urad dal
  • 2 Dry Red Chilli broken into small pieces
  • 1 sprig Curry leaves
  • ½ cup Fresh Coconut grated

Instructions

  • Bring water to a boil in a sauce pan. When it starts to boil, take it off the heat and add in salt and oil. Add in rice flour and mix well. It will get thick. Now cover it and let it cool down.

  • Once it is cooled, add in some grated coconut and make small balls out of it. Place the balls in a oiled steaming plate and place it in steam and steam cook for 7 to 8 mins. Remove it and allow it to cool down.

  • Heat oil in a kadai. Add in all tempering items except coconut,saute it for a min,

  • Add in kozhukattai and some salt. Mix well.

  • Add in grated coconut and toss well.

  • Serve.

How to Make Kozhukattai Maavu (Pictures)

  • Bring water to a boil in a sauce pan.
  • When it starts to boil, take it off the heat and add in salt and oil.
  • Add in rice flour and mix well. It will get thick.
  • Now cover it and let it cool down.
  • Once it is cooled, add in coconut and make small balls out of it.
  • Place the balls in an oiled steaming plate and place it in steam and steam cook for 7 to 8 mins.
  • Remove it and allow it to cool down.

Version 2: Kara Ammini Kozhukattai Recipe

This version of mani kozhukattai is made with regular rice flour. You can use store bought rice flour. I used rice puttu flour. Spice powder is tossed in mini kozhukattai and is a spicy verison.

Ingredients for Kara Ammini Kozhukattai

For Spice Powder:

  • Oil - 1 tsp
  • Chana Dal / Kadalai Paruppu - 1 tblspn
  • Urad dal / Ulundu Paruppu - 1 tblspn
  • Dry Red Chilli - 3
  • Kashmiri Red Chilli - 2
  • Whole Pepper - ½ tsp
  • Cumin Seeds / Jeerakam - ½ tsp
  • Fresh Coconut - ½ cup grated

For Seasoning:

  • Oil - 1 tsp
  • Mustard Seeds / Kaduku - 1 tsp
  • Urad dal / Ulundu Paruppu - 1 tsp
  • Curry Leaves a sprig

How to Make Kara Ammini Kozhukattai Recipe

  • Prepare Ammini Kozhukattai as usual.
  • Make the spice powder. Take all the spice powder in a kadai along with oil. Roast till golden. Now add in coconut and toss well in the spices. Once it turn light golden. Take this in a blender and make it into a fine powder.
  • Heat oil in the kadai. Add in the tempering spices and saute it for a min.
  • Add in steamed kozhukattai and toss well.
  • Add in the spice powder and mix well.
  • Serve.

Version 3: Ammini Kozhukattai using Red Rice

This version of mani kozhukattai is made with red rice. You can use store bought red rice flour. I used red rice puttu flour. It is a healthy alternative to regular rice flour.

Preparation Time : 10 mins

Cooking Time : 15 mins

Serves : 2 to 3

Ingredients for Red Rice Ammini Kozhukattai

  • Roasted Red Rice Flour - 1 cup ( I used puttu flour)
  • Salt - 1 tsp
  • Water - 1.5 cup
  • Oil - 1 tblspn
  • Mustard Seeds / Kaduku - 1 tsp
  • Urad Dal / Ulundu Paruppu - 1 tsp
  • Dried Red Chillies - 2 cut into small pieces
  • Asafoetida / Hing / Kaya Podi a pinch
  • Curry leaves a sprig
  • Coriander Leaves a handful finely chopped

How to Make Red Rice Ammini Kozhukattai

  • Heat oil in a pan, add in all seasoning ingredients and let them sizzle. Add in coriander leaves and give a quick toss.
  • Now add in water and salt. Bring it to a boil.
  • Once it boils add in the rice flour and mix well. Cook till it comes together as a mass.
  • Cool it slightly, take small portion and roll it into smooth ball.
  • Arrange it in an oiled steamer plate and steam for 7 to 8 mins. Remove and serve.
