A delicious soup is a year-round staple in most Amish homes. Part of the appeal is it's easy: one pot, one burner, one spoon, a few ingredients, and you have a meal. Autumn brings the pumpkin, potato, and squash soup, summer brings the peas, broccoli, and cauliflower soups.

Broccoli soup is popular in Amish kitchens, potato soup is enormously popular, as are cheese soups. Reader Penny shared this amazing-looking classic Amish broccoli cauliflower cheese soup recipe with us and it's so close to what you'd find in an Amish kitchen.
🥣 The Amish and Summer Soups
Ah, spring and summer...that is when the greenhouses and gardens begin to overflow with fresh produce: peas, lettuce, cucumbers, cauliflower, tomatoes, and on and on. Many of these delicious vegetables, along with their companion herbs, eventually find their way into soups. Some favorite Amish summer soups include:
- tomato
- broccoli
- cauliflower
- broccoli-cauliflower
- pea
- carrot soup
Basically, if you can grow it in the garden, you can make it into a soup. Well, no, that's not true. Lettuce soup? No. But many veggies can be incorporated into a nice summer soup.
📋 Step-By Step Cheesy Broccoli-Cauliflower Soup
If you want to save yourself time, you can make this same soup by buying frozen broccoli florets and cauliflower florets. The advantage to doing that is that there is no cutting of veggies, just dump them into the soup pot. Or you can use fresh and do the chopping, etc. And, if you like the way this soup sounds but don't like cauliflower, you can omit that and just make a broccoli cheddar soup with this recipe, or use any kind of cheese to make whatever kind of broccoli cheese soup you want!
But here's the most important rule when you are making this soup: There are no rules. If you want to add more salt, add more salt. More pepper? No problem. Dice in some carrots, parsley, or radishes? Fine. Actually, I think some chopped onion and or cloves garlic goes well in this soup if you like the taste of those. Once you have the soup all put together per the instructions below, stir and simmer until all the veggies are nice and tender.
Use whatever kind of cheese (or a blend) you want, I personally like a sharp cheddar cheese. It has a nice flavor and texture, but you won't do harm to the basic bones of this recipe by making your own variations anywhere. Another variation is to replace some of the whole milk with heavy cream so you get a nice blend of the two, for a fuller, richer soup.
And when it is all done, crumble a little bacon on top of the soup if you wish.

Amish Cheesy Broccoli-Cauliflower Soup

Ingredients
- ½ cup butter
- ¼ cup flour
- 1 teaspoon salt optional
- 4 cups whole milk
- 1 large head broccoli, fresh is best (about 4 cups chopped)
- 1 large head cauliflower, fresh is best(about 4 cups chopped)
- 4 cups shredded Cheese, Colby-Jack mix recommended but any will do.
Instructions
Steam the broccoli and cauliflower in the soup pot (or however you wish) until slightly firm with good texture and color.( about 8 minutes on high heat)
Do NOT cook them to mushiness.
Remove the veggies and Set aside.
Making the sauce- In a large soup pot, melt the butter on low heat.
Raise heat to medium and add the flour.
Whisk the flour and butter together until it bubbles and immediately pour in 1 cup of milk while whisking.
Add the remaining milk slowly as the sauce thickens, whisking constantly. Add shredded cheeses into the sauce.
Stir until all the cheese is melted. Pour the steamed vegetables/ Bring up to slow boil over medium heat while stirring to thoroughly mix the ingredients.
REDUCE the heat to simmer stirring often.
When veggies are tender, ladle into a bowl and serve!
