Tomatoes and cucumbers are summer staples! When you pair the two with onions and a simple dressing, you’ve got a flavor explosion on your hands! This is the perfect recipe to use up garden produce, too! Tomatoes and cucumbers also seem to be grow pretty prolific in gardens during the summer months so this is the perfect recipe to use them up!

Cucumber Tomato Salad Ingredients:

  • Cucumbers (Persian cucumbers or an English cucumber work great!)
  • Red onion; sliced
  • Cherry tomatoes; sliced. You can also use Roma tomatoes, but they’ll need to be diced small.
  • Italian Dressing (also try it with balsamic vinegar dressing)
  • salt and pepper

How to make Cucumber Tomato Salad:

First peel the cucumbers. Get a fork and score the sides. This makes them look pretty so is completely optional. Then slice the cucumbers into thin slices.

Cut the cherry tomatoes in half. If using Roma tomatoes, or another variety, simple cut the tomatoes into small, bite-sized pieces. On the seedier versions, you will need to remove some of the seeds.

Then combine the sliced cucumbers, tomatoes and onions in a large bowl. Pour Italian salad dressing over the salad. Lastly season to taste with salt and pepper.

Shake to stir and coat all the delicious veggies with the dressing. Refrigerate for at least an hour. Serve cold and enjoy!

I typically use premade Italian Dressing for this quick summer salad. But, you can easily change up the flavor by using different oils and vinegars to go on it.

Classic olive oil and vinegar combined with fresh basil or even dried oregano is a delicious option. Balsamic vinegar and olive oil is another flavor packed choice!

It is fun to play around with different flavor combinations and see what your family likes best. Use your favorite dressing to make this one of your favorite, easy salad recipes.

You can also make a quick mustard vinaigrette by combining 1 tablespoon of dijon mustard with 3 tablespoons red wine vinegar and 1 ½ tablespoons of olive oil. Season with salt and pepper and some garlic powder and you’ve got a simple side dish with a creamy kick!

Can I Make it Ahead?

I love making this tomato and cucumber salad ahead of time! The longer the vegetables sit in the vinegar dressing the more flavorful they will become.

Because of this I highly recommend that you make this quick salad at least a couple of hours ahead of when you plan to serve it. It can marinate in the fridge for up to 24 hours.

Pro tip: If you make this salad the night before, stir in an additional dressing right before serving as the veggies will soak up quite a bit of the dressing overnight.
